Stuffed Veggie Peppers

Ingredients
3 bell peppers
3 potatoes – chopped (I use red, but any variety works)
1/4 cup green peas
1/4 cup corn
1/4 cup nuts (I prefer pecans or cashews roughly chopped,
but feel free to experiment)
1 cup spinach leaves – rough chopped
1 medium onion – finely chopped
2 garlic cloves – finely chopped
1 tbsp olive oil
cilantro for garnish
salt and paprika (optional) to taste
Directions
- Boil the potatoes, peas, corn and spinach in water (add the spinach at the very end since it wilts quickly)
- Slice off the top of the peppers and de-seed
- Preheat the oven to 350 F
- Saute the garlic and onion in oil until golden
- Add paprika or 1/2 tsp chilli powder and saute for one minute (Skip this step if you prefer mild flavor)
- Add boiled veggies and mash them, adding salt and cilantro. Mix well.
- Stuff the mixture into the peppers and bake for about 15mins
- Garnish with nuts and cilantro
