Stuffed Veggie Peppers

Week 3 Winner

Ingredients

3 bell peppers
3 potatoes – chopped (I use red, but any variety works)
1/4 cup green peas
1/4 cup corn
1/4 cup nuts (I prefer pecans or cashews roughly chopped,
but feel free to experiment)
1 cup spinach leaves – rough chopped
1 medium onion – finely chopped
2 garlic cloves – finely chopped
1 tbsp olive oil
cilantro for garnish
salt and paprika (optional) to taste

Directions

  1. Boil the potatoes, peas, corn and spinach in water (add the spinach at the very end since it wilts quickly)
  2. Slice off the top of the peppers and de-seed
  3. Preheat the oven to 350 F
  4. Saute the garlic and onion in oil until golden
  5. Add paprika or 1/2 tsp chilli powder and saute for one minute (Skip this step if you prefer mild flavor)
  6. Add boiled veggies and mash them, adding salt and cilantro. Mix well.
  7. Stuff the mixture into the peppers and bake for about 15mins
  8. Garnish with nuts and cilantro
